How to cook okpa Nsukka step by step

Okpa also called Bambara nut pudding is a traditional delicacy from Enugu state in Nigeria It is prepared from Bambara nut flour, palm oil and other local spices then wrapped in foil, leaves or tied in a white nylon.

Known for its unique taste and high protein content, okpa Nsukka is both nutritious and filling.

Ingredients needed to cook okpa Nsukka

To make okpa Nsukka, you will need;

.4 cups of okpa flour(bambara nut flour)

  • 1 milk cup of red oil( the beauty of okpa is adequate oil)
  • 1 teaspoon of grounded uziza seeds
  • grounded pepper
  • salt to taste
  • lukewarm water
  • banana leaves, foil, aluminum cup or white nylon(for wrapping)

Step 1: Prepare the wrappers
  • Wash and clean banana leaves, if you are using foil, cut them into desirable sizes. If you are using aluminum cups, wash them and get them ready.

Step 2: Mix the okpa flour

  • In a clean bowl, pour the okpa flour. Add palm oil and stir till the colour is consistent. This is one of the most important parts of how to cook okpa Nsukka because the palm oil gives it the distinct golden look.

Step 3: Mix the okpa with lukewarm water

  • Add lukewarm water little by little as you stir. Stir continuosly to avoid lumps. The goal is to achieve a smooth, medium-thick batter that is not too watery and not too thick.

Step 4: Season the mixture

  • Add pepper, ground uziza and salt to taste. Mix thoroughly so the flavors spread evenly.-

Step 5: Wrap and tie

  • Scoop the mixture into the leaves or desired containers.

Step 6: Steam the Okpa

  • Arrange the wrapped okpa in a pot, add some water(about one-third of the pot) and cover tightly. Steam for about 45 minutes to 1 hour on medium heat.

Step 7: Check for doneness

  • Insert a fork or toothpick. If it comes out clean, your okpa Nsukka is ready to serve.

Serving Suggestions

Okpa Nsukka is best enjoyed hot. You can eat it with pap(akamu), custard, tea or on its own as a filling meal.
